Tony's Cheese Soup w/ Vegetable of Choice
- Saute 3/4 cup chopped onion and garlic (amount of your choice) for 3 minutes in 3 Tbls olive oil
- Add 6 cups chicken broth or 6 cups water and 6 chicken bullion cubes
- Add 8 oz fine egg noodles, 1 tsp salt and Cook 3 minutes
- Stir in any vegetable of choice and cook 4-5 mins
- This recipe originally called for broccoli but I have made it with asparagus with great results
- I have also added 1 addition cup of the vegetable, pureed, to add even more flavor
- Add 6 cups milk and 1 lb cubed Velveeta cheese
- Stir until melted
- Continue cooking until the soup reaches your desired consistency and vegetable tenderness
- Makes about 2 gallons and is wonderful on chilly days
